Ingredients

1 kg potatoes, floury

1 carrot

2 onions

1 tsp butter

850 ml water

4 Mettenden

300 g cooking cream

3 pinches of salt

Vegetable broth with no added sugar

1 First, peel the potatoes and cut them into small cubes.

Then peel the carrot and cut it into equal-sized pieces.

2 Now peel the onions and dice finely. Then put the butter in a wide saucepan and heat over medium heat.

3 Next, add the onion and carrot to the pot and sauté for 2 minutes. Then add the potatoes, water and vegetable stock without added sugar, bring to the boil and season with 2 to 3 pinches of salt.

4 Now add the meatballs to the pot and let them simmer for about 20 minutes. When the potatoes are soft, remove the ends and add the cream.

5 Now mix the soup finely with a hand blender, cut the ends into slices and put them back in the pot.

6 Our tip: Instead of Mettenden, you can also use smoked tofu for a vegetarian version.
