Sponge cake base (from a master baker who unfortunately passed away)

Ingredients

4 large eggs

4 tbsp water, hot

150g sugar

1 vanilla sugar

120g flour

120 g cornstarch (Mondamin)

½ point baking powder

preparation

(For a 26 springform pan).

1. First, separate the eggs and mix the yolks with the hot water until foamy. Then add the sugar with the vanilla sugar and beat everything into a thick cream.

2. Now add the egg whites, beaten separately to form egg whites (stir for 20 minutes), over the cream and cover with the flour-Mondamine-baking powder mixture that was previously sifted. Then fold in carefully with a whisk.

3. Now bake at 170 degrees on the middle rack for about 40 minutes. You can cut the base twice, i.e. for 3 bases.
