Soft apple pie: the secret to making it super soft and delicious!

INGREDIENTS
3 eggs;
200 g (1 cup) sugar;
1 teaspoon vanilla extract;
200 g (⅔ cup) yogurt;
280 g (2 cups) all-purpose flour;
16 g (2 tablespoons) baking powder;
1/2 teaspoon cinnamon;
2 apples;
30 g (2 tablespoons) melted butter.

METHOD

Preheat the oven to 170C/340F. Line a 16 cm round baking tin with baking paper.

Beat the eggs with the sugar and vanilla until pale and fluffy.

Add the yogurt and beat until smooth.

Sift the flour separately and beat it with the cinnamon and baking powder.

Mix the wet and dry ingredients into a smooth paste.

Peel and core an apple, cut it into cubes and add it to the batter.

Pour the batter and spread it evenly in the pan.

Top with another apple, cored and thinly sliced.

Pour the melted butter over it and bake the cake for 1.5 hours.
