Step 1

To determine if your eggs are fresh, you need to check the air pocket. In fresh eggs the air pocket is very small, in stale eggs it is very large. To check whether the air pocket contains very little air, the egg should be lowered horizontally into a glass filled with water. If the egg is no longer completely fresh, tip it slightly into a semi-horizontal position at the bottom of the glass. And if the egg is stale, it will simply float in a vertical position when you try to sink it.

When the eggs are cracked, the fresh egg has a plump yolk and a gelatinous ring of white surrounding the yolk and another ring of white. When it’s no longer as fresh, the yolk will look a little flat in the middle, the double ring won’t be as visible, and the white will be watery. When the egg is old, the yolk is very flat and the white is just watery.
